Scandinavian Homemade Crispbread - Knækbrød Homemade crispbread is made with a minimum quantity of flour, water and vegetable oil and lots of seeds, making it a very healthy type of bread due to its high content of fibres. It is also quite easy to make, so you won’t need more than 30 minutes to prepare and to bake it. Homemade crispbread is tasty, crunchy and the perfect accompaniment to soups, patés, cheese or simply as a snack.  It will keep for quite awhile once cooled completely and stored in an airtight container. Mummy Hot Dogs (Pølsehorn) Happy Halloween to you all!!!  Ingredients for Mummy Hot Dogs: 1  package of crescent rolls (or crescent roll dough) 10 good quality hot dogs mustard and ketchup to serve How to Make Mummy Hot Dogs: Preheat the oven to 200 ° C (or according to the package instructions of the dough you are using). Line a baking tray with parchment paper, then set aside. If you are using crescent rolls, unwrap it, then separate it at perforations. With your fingers, press perforations of the dough to seal it and to create a rectangle. If using dough sheet, unwrap it and using a pizza cutter or a sharp knife, cut it into 4 rectangles. Tortilla chips with Cheddar cheese and tomatos Tortilla chips with Cheddar cheese and tomatoes (or simply called Nachos) are a delicious snack that goes very well with beer. Each time we meet friends in a pub in order to have a few pints, we like to order them. Frequently we are quite dissatisfied by the quality. Rosie McGee’s in Copenhagen used to have very good nachos until recently, but last time when we ordered, we noticed a significant drop in quality. Our own version if very easy to make. We used a large bag of tortilla chips (Santa Maria chips are our favourite), grated red cheddar, few tomatoes, a handful of black olives, pickled jalapenos, juice of half of a lime, a bit of balsamic vinegar and olive oil, cilantro, salt and pepper. You can cook the nachos in an oven proof dish or baking sheet. We prefer a taller one, so that we could stack multiple layers of chips. This time, we had 2 layers of chips and 2 layers of cheese. The receipt for today is a quick option for a lunch or dinner: rolled puff pastry with vegetables and anchovies. The bellow ingredients can be used for 4 pastries of about 16cm x8 cm. Ingredients for Rolled puff pastry with vegetables and anchovies : 4 sheets of frozen rolled puff pastry (thawed) of 20×10 cm. Obviously you can use larger sheets of pastry or cut them in bite sizes as you like it 50 grams of cream cheese (Philadelphia is a good option for this) few pieces of anchovies, cut into thin stripes 50g of olives, halved and with their seeds removed 150g mushrooms (either fresh or canned) chopped in small pieces  *** sliced half of a bell pepper cut in thin stripes salt, black pepper, oregano to each one’s taste (be careful on the amount of salt because anchovies are normally quite salty) one tablespoon of olive oil a handful of canned kernel corn one tablespoon of capers The good part of this recipe is that you can easily change one ingredient with an...
