Colourful Chicken Fajitas with chunky salsa

Mexican food was always a temptation for us, therefore we decided to dig into this cuisine by preparing some simple, yet very tasteful Chicken Fajitas with colourful bell pepper. Fajita is a very popular Tex-Mex dish, consisting of grilled meat topped with vegetables and sauces served on a flour or corn tortilla.

Fajita is, also, easily customisable according to a particular need. In other words, you may use any type of meat you like, such as: chicken, pork, lamb, salmon, beef, as well as vegetables instead of meat, and of course, any mouthwatering topping, such as: lettuce, sour cream, guacamole, salsa, grated cheese and diced tomatoes. When using meat, the cooking includes red onions and colourful bell peppers. 

The below ingredients are for 2 servings.

Ingredients for Chicken Fajitas:

  • 4 large wheat or corn tortillas
  • 2 large chicken breasts
  • 3 bell peppers (red, yellow and green)
  • 100 g precooked black beans
  • 1 small red chili pepper
  • 50-100 g Cheddar grated cheese (or other type of cheese if you like)
  • cilantro, chopped
  • juice of one lime
  • 2 tbsp olive oil
  • 200 g medium or hot chunky salsa (we bought it but it could be also be homemade)
  • 200 g crème fraîche
  • fajita spice mix

How to prepare Chicken Fajitas:

  • Prepare the chicken breast: cut it into thin strips and sprinkle it with fajita spice mix. Set aside while slicing the bell peppers and chili.
  • Meanwhile, heat the oil in a large nonstick frying pan over medium-high heat. Add the chicken and a bit of chili and cook for 5 minutes, or until the chicken is cooked through. Drizzle with the lime juice for extra flavour. After, transfer the chicken to a plate and set aside.
  • Using the same pan, heat remaining oil and saute peppers for about 5 minutes or until tender.
  • While on heat, mix the chicken with the bell peppers, black beans and grated cheese. Cook until the cheese has melted. Remove from heat and add the cilantro. Set aside.
  • Warm tortilla on a grill pan or in the oven.
  • To serve: fill the centre of the each tortilla with the chicken mixture. Fold the bottom up over the filling and fold the sides in, overlapping them. Wrap your Chicken Fajitas in individual sheets of baking paper or foil. Top with cilantro, salsa, crème fraîche and finally: your Chicken Fajitas are ready to serve.
